When I was walking through the produce section, this morning, I saw these brown tomatoes called Kumato. Honestly, I’d never heard of brown tomatoes before or Kumato’s so I just had to buy some to see what all the fuss was about.
The package said simply unique BROWN tomato so I had no idea what I’d do with them. I wanted something that would be simple and allow the tomato to shine through so I picked up some fresh mozzarella to make a straightforward caprese salad.
Caprese is a simple salad comprised of fresh sliced mozzarella, tomatoes and basil. It can be made a number of ways but I just went with plain & simple. I sliced the Kumato’s and mozzarella then drizzled them with a simple vinaigrette made of basil, olive oil and lemon juice (1/3 cup of extra virgin olive oil, 1 tsp chopped basil, 1/4 tsp lemon juice). I then garnished with freshly ground pepper and Maldon Sea Salt Flakes … What a treat, right?
I gotta tell you, I felt like I was transported to a fancy restaurant with this dish. It really tasted great and looked gorgeous. The hubs and I both felt that that the Kumato’s tasted just like any other tomato (so no real fuss there); however, the combination of the brown tomatoes with the Maldon salt was really a great combo that felt extra special.
Since we were both standing in the kitchen in our socked feet and sweatpants, I decided to take it down a notch and just chopped everything else together into a bowl. Now the dish matched our situation. Extra tasty but extra simple.
